The aim of the project is to develop, test, evaluate and establish an additional qualification in "Sustainable management in the food trade" consisting of five modules and certified by the Chamber of Crafts. The focus is on apprentices from small and medium-sized craft businesses training to become bakers, confectioners and specialist salespeople in the food trade specialising in bakery and confectionery. They will be able to evaluate the value chain as well as the work and business processes of bakeries and confectioneries in terms of their sustainability, develop proposals for changing and optimising processes in terms of sustainable management and submit ideas for innovative products that contribute to the social, ecological and economic sustainability of the company and society. In particular, this also includes sensitising consumers with regard to food waste, health and regionality.

The competence-oriented modules of the additional qualification address the topics of sustainable management (M1), working in the food trade (M2), consumption and nutrition (M3), food waste (M4) and developing innovative products (M5).

The additional qualification combines theory and practice by considering the company as a place of learning. To this end, company training staff are actively involved in the development and implementation of the qualification programme. Skilled apprentices and trainers act as learning guides for the apprentices and at the same time as multipliers and are prepared and trained to fulfil this function.

Using a design-based research approach, the additional qualification is evaluated quantitatively and qualitatively and iteratively developed further on the basis of three trial runs.
